Simple Vegan Chickpea Curry

I tried making a Chickpea Curry, it taste awesome (for me) but I don’t know for others. I’m by no means an expert cook, actually I don’t know how to cook. I just followed some recipes on the internet, and this Chickpea Curry is no different. However, mine is simple, as I only used ingredients that are readily available in my kitchen.

  • Garlic
  • Onions
  • Oil
  • Pepper
  • Chili flakes
  • Canned Chickpea
  • Coriander leaves
  • Salt
  • Tomato
  • Water
  • Coconut milk

I chopped the onions and garlic and put it on a preheated pan with oil.

When the onions turn golden brown, I add the chopped tomatoes, pepper, salt, and chili flakes. I mixed them all together and then add a cup of water.

Let the ingredients simmer. Then I add the drained chickpea and stir.

Add the coconut milk, and again mix, then let it boil for a while.

Add the coriander leaves, mix, and cook for 5 more minutes.

It’s best serve with rice.

Here’s my Chickpea Curry. It’s not perfect but at least I’m learning how to cook because I don’t cook, which is obviously not good. I find it fun to cook my meals. I even plan ahead what I want to cook the next day because I’m trying to incorporate a lot more of plant-based food in my diet, while slowly eliminating meat, but it’ll take a while. #gogreen I guess! The important thing here is at least I’m trying even if it requires a little more effort.
